Warm up with this immune-boosting soup packed with red lentils, sweet potatoes, and chickpeas – a perfect healthy fall soup to enjoy on a cold day.

Ingredients:

  • 1 tablespoon olive oil

  • 1 yellow onion, diced

  • 6 cloves garlic, minced

  • 1/2 teaspoon freshly grated ginger

  • 1 teaspoon turmeric

  • 1/2 teaspoon paprika

  • 1 tablespoon lemon juice

  • 1 large sweet potato (about 1/2 lb), diced into 1/2” cubes

  • 1 can (15 oz) chickpeas, rinsed and drained

  • 1 cup red lentils, uncooked and rinsed

  • 5 cups vegetable broth

  • 1/2 cup kale, destemmed and torn into 1″ pieces

  • Salt to taste



Instructions:


Heat the Olive Oil:

  • In a large pot or Dutch oven, heat the olive oil over medium heat for 1 minute.


Cook the Onion:

  • Add the diced onion and cook over medium heat for 8 minutes, stirring occasionally until the onion is translucent and soft.


Add Garlic and Ginger:

  • Add the minced garlic and freshly grated ginger. Continue to cook for 1 minute until fragrant.


Add Spices:

  • Stir in the turmeric and paprika. Cook for 1 minute to release the flavors of the spices.


Add Main Ingredients:

  • Add the lemon juice, diced sweet potatoes, rinsed chickpeas, red lentils, and vegetable broth. Stir to combine all ingredients.


Bring to a Boil:

  • Increase the heat to bring the soup to a boil. Once boiling, reduce the heat to low and let it simmer for 15-20 minutes, or until the sweet potatoes are tender.


Add Kale:

  • Stir in the kale and continue to cook for an additional 2-3 minutes, until the kale has softened and wilted slightly.


Season to Taste:

  • Taste the soup and season with salt as needed.


Serving Suggestions:


  • Serve this healthy fall soup hot, with a slice of crusty bread on the side for a complete and satisfying meal.
